"Kaang Ped Kai" and "Kaang Ped Nuea" are the most popular kaang in Bangkok and central plains. Likewise, Red Chicken Curry and Red Beef Curry are also favourite curries among foreigners who traveled. The coconut flavour is enhanced by adding 1 cup of coconut milk towards the end of the cooking process. The main ingredients are garlic, shallots, (dried) red chillies, galangal, shrimp paste, salt, kaffir lime peel, coriander root, coriander seeds, cumin seeds, peppercorns and lemongrass. Common additives are fish sauce, sugar, Thai eggplant, bamboo shoots,thai basil (bai horapha), and meat such as chicken, beef, pork, shrimp, frog, snake or duck. Tofu, and meat or vegetables such as pumpkin, can be substituted as a vegetarian option.
